THE REAL MCCOY MUSTARD SQUASH BURGERS
- 2 cups summer squash or zucchini, shredded
- 1 cup onion, minced
- ¼ cup red bell pepper, chopped
- 1 egg, beaten
- ¾ cup Italian seasoned bread crumbs
- 2-3 Tbls Real McCoy Mustard Sauce
Combine all the ingredients. Form into 6 patties. Heat 2-3 tablespoons of oil in a skillet. Place the patties in the skillet and fry 3-4 minutes on each side or until brown and crisp. Remove from heat and drain excess oil on a paper towel. Serve on a bun with additional Real McCoy Mustard Sauce, lettuce and tomato on the top.
