RAMP DRESSING ROASTED BRUSSEL SPROUTS

The distinctive flavor of ramps brings balance to this healthy, sophisticated side dish. Adding Uncle Roy's Old Fashioned Ramp Dressing to oven roasted brussel sprouts and sweet potatoes elevates the vegetables, while the cranberries and feta cheese provide a contrast of sweet and savory to the dish.

This is a hearty dish for fall and winter -- that can be enjoyed with the typical springtime flavor of ramps year round thanks to Uncle Roy's Old Fashioned Ramp Dressing.

Uncle Roy's Old Fasioned Ramp Dressing Roasted Brussel Sprouts with Sweet Potatoes, Cranberries and Feta Cheese 

  • 1 lb Brussel sprouts, halved
  • 2-3 Medium sweet potatoes, peeled and cubed
  • 1 cup of cranberries
  • Uncle Roy’s Old Fashioned Ramp Dressing
  • Salt and pepper, to taste
  • ½ cup feta cheese

Preheat oven to 400 degrees. Place the Brussel sprouts, sweet potatoes and cranberries in a bowl. Splash Ramp Dressing on the vegetables and toss to coat them thoroughly. Spread the vegetables on a lightly greased cookie sheet, season with salt and pepper, and roast at 400 degrees for 30 min. or until they are tender and slightly browned (roasting time will vary by oven). Remove from the oven, sprinkle with feta cheese and serve.
